Chanpurū (チャンプルー)

I made an Okinawan stir fry dish served with a side of rice (Chinese hot oil on top of course) and pickled ginger. If I make a decent living for myself from my emergency med career, I'll probably consider opening a restaurant with a Vietnamese Japanese fusion to it. 

As of now, I'm probably gonna hit the gym or study. My college just announced that they're extending Spring break for another week because of this Covid-19 shit show.  It's kinda lame, but whatever. I hope whoever's reading this is healthy and doing okay.
